Roberto has now given me the oifficial answer:
The Ent's "to hit" roll is not modified when attacking Orthanc but the Stronghold must be reduced before casualties apply.
I will be adding this to the FAQ shortly.

The Ents don't care if there is a Stronghold in the Region in the main game expansion.

when the ents attack orthanc and shadow-armies are destroyed, will saruman be killed (as normal leader do)? the ent-attack is normally the end of the fate-track as we know...

Yes, if the Ents reach Orthanc and wipe out a Isengard army there Saruman is eliminated along with the army.

So the FP can win the game only with the ent attack, without a FP army in Orthac? quite strange since, as it has been said, the ent attack should be the end of the fatetrack.

It is quite easy for the Shadow to protect Orthanc from the Ents.
It takes at least six Ents to reach Orhtanc and a single Isengard unit in West Nan Curunir and East Nan Curunir forces the FP player to use all eight Ents to reach the Orthanc Region.
A lone unit in either West Nan Curunir or East Nan Curunir will force the FP player to use seven Ents and if there is an army in the Orthanc Region the Stronghold must first be Breached by the Ents.
Either way there is plenty of time for the Shadow player to either move the army away from Orthanc (and thereby saving Saruman) or to reinforce a damaged army in Orthanc.
If the Entwood is reformed close to Orthanc the Shadow player still have plenty of time to move the army away from Orthanc.
In all my games there has always been better use for the Ents. Most often to help protect the Deeping Coomb and Helm's Deep or to keep the Rohan Plains free of enemy armies.

I agree with you but i wanted the confirmation, ents can kill saruman and make FP win the game.
