From my understand of "Combined attack", with one dice you can attack with 2 or more adjacent armies. Thus, theoretically, the SP could attack Minas Tiriath with 5 armies using only 1 die! Is this right?

As with any Combined Attack, the attacker chooses which Army to fight with in each combat round. Each Army must deal independently with the Stronghold defenses present on the boundary across which it is attacking. However, the Armies in North Rammas and North City Wall will both affect and by affected by the Stronghold defenses on the north side of the city, and the Armies in South Rammas and South City Wall will both affect and be affected by the Stronghold defenses on the south side of the city.
Since the city's Stronghold defenses apply independently to different Regions, a Combined attack on Minas Tirith is in effect just three separate attacks bought with one action die - A Combined Attack in the north, a Combined Attack in the south, and an attack on the Great Gate. Of course, you also gain the ability to switch Armies every round and recover your Tactics tokens and the fact that Terrain Superiority is only checked once before the first attack.

The only advatage i would see of that is if you had 5 siege towers, thus attacking the units inside. The walls are way too strong. They can have only 5 units there after all.

Siege Towers can't be used in a Combined Attack.

Because the rules say they can't (page 31).
